On my site Ive got "recent posts" in a sidebar.

Where do I go to edit the actual words "recent posts"

Id simply like to change it to: recent uploads or recent images or recent graphics.

Go to Appearance --> Widgets, and since you have the Recent Posts widget in the right sidebar, choose Right Sidebar and click Show. There you can edit the widget title to whatever you want.
