I'm just wondering if I can place only some categories on the page menu bar?

For eg. Home About Family Fishing etc.

Now when I put %cats in the Configure Header Area, all the categories show up; and they are above the Home About (the main page menu bar)

categories and pages are two different entities in WordPress. You can do what you want, but you will have to make some code changes. Do a search of the forun with 'category in page menubar'
