I would like to add a link to the email address contained in WordPress ==> Admin ==> email address to the footer. How can I do that?

you could also use

<?php echo '<br><a href="mailto:'.get_bloginfo('admin_email').'">Email the admin</a>'; ?>

wich would work wven if you change the admin email address in teh settings.
