Overall layout height
 
Anyone aware of a way to set the overall height of the theme, including header, footer, etc?

I'm testing some CMS ideas with the theme, need a set height, where posts would break into multiple pages if needed (or use a scroll bar for long posts?)

Can't find anything on line dealing with height, doesn't seem to be something wordpress supports.

It doesn't. Because the page is dynamically built and the contents can be changed from moment to moment, there is a way to define a height

I'm guessing you mean "no way"?...

I've worked with dynamic sites before where the container was a set height and content could overflow into secondary pages. it's not necessarily a dynamic issue, as there's plenty of shopping sites that use data for items and SKUs and dynamically generate page links and pages. (However, I was always design/useability for those sites, not code). Just wondering if anyone has heard of WP being able to replicate that?

You can set where the page will break into a second page while you're creating a post, using the Insert page break icon. That might not be what you're really asking for, but it does allow some control.
