creating my own header image

If I want to create my own header image. what exact size is the image? I've seen listed 1300x160 and 250X1440? I also removed the logo image area so if I want to make the header a bit wider will it just naturally spread out to fill up more space?

the size of the header image depends on the size you want. How much of the height of your page do you want to take up with the header image? 50 px? 100 px? 500 px? What you decide is how tall your image should be.

How Wide? Well what the maximum width of a screen that will be viewing it? Since most people have screens bigger than 800 X 600, you probalbly want it at least 888 wide. Personally I decided on 1440 for the MAX width of my page, so that is how wide I make my images. It's up to you.

The header location for Atahualpa is: \wp-content\themes\atahualpa\images\header

Your header images can be anysize you want really. You would delete Atahualpa's default images and replace them with your own. The file names don't matter as Atahualpa will recognize jpg, png, gif file extensions

On my site, my header size is 950x200.

one thing from a picture taking view. Since you are going to have to crop almost any photo you take, start thinking 'short and wide' A full frame portrait of a person just won't work. It's best to have long shots that will make cropping the photos easier.

how do we crop the photos? specifically?

use a photo program. On the MAC, I use a program calleed EasyCrop and boy it is easy. Photoshop allwos you to crop things and there are many others. Try doing a google search using the terms 'cropping photos'
